This is a quick, easy lunch that we enjoy. It's roughly based on the recipe on
this site, but we don't have a "large family" so we've adapted it.
1 onion, chopped
2 cloves garlic, minced
1 can corn
1 can black beans
1 can some other kind of beans
1 can tomato sauce or diced tomatoes
1/2 tsp chili powder
1/4 tsp cumin
1/2 tsp thyme
1/2 tsp oregano
Mix in crockpot, cook on high, 2-3 hours.
Serve with sour cream, shredded cheese, fresh cilanto and tortilla chips
